The small fenugreek soaked dosa has the fresh flavour of methi, and the white coconut chutney accompanying it is delicious with the flavour of green chillies and asafoetida. The black night shade or macoy used to prepare vethal kuzhambu (a thickened tamarind sauce without dal) is an outstanding accompaniment to rice and yoghurt sweetened by a dash of ripe pomegranate.
